Split Pea Soup
serves 4
Ingredients
- 8 C chicken broth
- 1 lb split peas, dried
- 3-4 ea carrots, bite-size pieces
- 2-3 stalks celery, bite-size pieces
- 1 ea onions, large chop
- 4-6 cl garlic, smashed
- 1/4 t curry
- 1/4 t coriander
- 1/4 t thyme
- 1/4 t cumin
- 2 ea bay leaves/li>
- 1 ea ham bone, with extra meat still attached
Instructions
- Lightly saute the vegetables in olive oil with the garlic and herbs, then add the broth, peas, and ham bone. Simmer several hours until the peas are fully cooked and soft.
- Remove the bone and ham, then blend the soup until smooth. Remove the meat from the bone, cut into bite-size pieces and add the ham pieces back to the soup. Heat through and season to taste.
- Plate and serve hot.
